HELP! Salmon en Croute Recipe please

Salmon en croute seemed a good idea for a meal on Boxing day evening and I bought a frozen side of salmon with herb butters from Mr T and some ready rolled puff pastry.
I then consulted my very extensive collection of recipe books and would you believe it ... not a single en croute recipe for salmon :mad:
Does anyone have a nice easy recipe I could try? Preferably one which looks as though i have spent hours in the kitchen but in reality takes a lot less
I could guess at a recipe but a tried and tested one with timings would be great.

I'm not sure if this would be quite what you are looking for or not but if I have salmon I often spread pesto on the top of it and add some crushed garlic and then wrap it in filo pastry and bung in oven for 25 mins 190 degrees.
I'm sure that would work with puff pastry too. Not sure if its what you want though.Tess x

I mix creme fraiche with spring onions to go with the salmon.
It's basically an assembly job - roll out the pastry, plonk the salmon on top, add some kind of creamy/herby sauce (e.g. creme fraiche with spring onion or watercress), wrap the rest of the pastry round the filling, seal, glaze and bung in the oven (on a greased tray).
Cook in a hot oven for about half an hour. Leaving slits in the pastry helps it stay crispy and gives you a chance to check that it's properly cooked.0 -
Take one tbsp of creme fraiche from tub and mix with 1 tbsp water. Flake raw salmon fillets into a tub of creme fraiche. Season with salt and pepper (and dill if desired). Roll out a sheet of puff pastry, and put a layer of raw baby spinach along one side, top with the creme fraiche mix. Fold the puff pastry over so encased as in an envelope, and crimp the edges. Brush with the creme fraiche water mix. Cook in a hot oven for 20-25 mins until golden brown. Serve immediately.0
