Chocolate trifle.

I'd like to make a chocolate trifle for Christmas. Any good recipes around?

The best trifle I have ever had is Nigella Lawson's chocolate cherry trifle. I made it last Christmas and it is truely divine. It is not at all money saving (as you make the custard yourself with loads of eggs) but you buy the chocolate sponge so there is some time saving. You need to make it the night before. There is a link below, but I noticed some web sites are listing a different trifle to this, including the Nigella site - this is the original from her cookbook. Hope this helps

    Generali's top chocolate mousse:

    1 bar 80% cocoa chocolate
    4x eggs whites
    1 medium pot double cream
    A good measure of Sherry/Brandy/Rum

    1. Whisk egg whites in spotlessly clean and dry bowl until the 'hard peaks' stage.
    2. Melt the chocolate in a bowl over boiling water. Don't let the bowl touch the water.
    3. Mix a spoonful of egg white into the melted choclate then fold the chocolate into the egg white. Then chuck in a good measure of booze and top with whipped cream.
    4. Refridgerate until set.

If you put some crushed hob nobs and some rasperries in the bottom of a bowl and poured over the mixture I reckon you could call that chocolate trifle.

PS This contains raw eggs so don't give it to a pregnant woman or anyone with an impared immune system.
  • I've not tried this one but it sounds good and easy-it's from my newest cookbook 'My Cuisine' by Trish Deseine who is Irish but lives and writes in France. The book is available from Amazon.Fr and it is in French.

    Totalement Chocolat (Totally Chocolate)

    For 4-6

4 chocolate muffins (preferably choc chip)
6-7 tbsp kalhua (I'm sure another liqueur, Baileys or brandy could be substituted)
    150g dark chocolate
    350ml whipping cream

Break up the muffins in the bottom of a serving bowl. Sprinkle on the kahlua and refrigerate.

Bring the cream to boiling point, take off the heat and stir in the chocolate broken into pieces. Stir until melted. Leave to cool then pour over the muffins and chill overnight.

Decorate with broken/chopped chocolate or chocolates.

I used to make a chocolate orange trifle -

1 chocolate swiss roll, sliced, lining the botttom of the bowl. Pour over 1 pint of orange jelly.

Make your custard (best to use powdered, ready made doesn't set properly, and then mix in a big bar (200g) of good milk chocolate (or dark if you prefer) with a spoon to melt. Allow to cool some, then pour over the set jelly.

Top with whipped cream, mandarin slices, and crumbled flake.

Hide from everyone and gorge yourself silly.
