Home made fresh pasta

Are there any tips for using a pasta machine at home?
I was given one for Christmas last year, and used it for the first time today - I found I needed an extra pair of hands, but how do you stop it sticking together once you've milled it down and pased it through for the last time and got 'strings'? Is it best dried a little before cooking?

Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.
