subcontracting whilst employed???

Hi all,
I am fully employed as a builder ( father son business), but am looking to do some work for our groundworkers- clients nor work connected to our business. Doing this after xmas due to our work drying up a little and they could do with a hand with some bigger jobs.
Question is; How does the groundworker pay me so it, 1. covers my wages obviously, 2. covers the insurance and N.I my boss pays and is all legal???
