In the bottom of my fridge

Options
i have a medium sized turnip and several small uncooked beetroots that i want to use up. I've just put a pan of soup on to use up the other turnip/parsnip/carrot/swede that was lurking down there so i'd rather not do soup with it, what do you all recommend? :)
I'll go and browse the recipe index in the meantime :)

I've just been given a recipe for roast beetroot which is apparently delicious - I'm cooking it with Sundays roast! All you do is drizzle the beetroot in olive oil and wrap it (with a spoonfull of water) in foil. Bake at 170C for 1-1 1/2 hrs.

Boil the beetroot for about 20 minutes, allow to cool and skin them, slice and out in a jar with half vinegar and half water, pickled beetroot to have with cold meat etc, keep the jar in the fridge.

Turnip, peel and cut into smallish cubes, steam or cook in water until just soft, mash with potato, or mash and add butter and nutmeg and serve as a vegatable with lunch/supper.

OK, silly question time, would i peel the veg first and is it cooked from raw in the oven or part boiled first?
Thanks for the recipe, it's a possible :)

OK, more silly questions - do i peel the beetroot first? Do i wrap each one individually or as a portion?
Many thanks, i love roast veg so this is a possible also :)

I put lots of root vegeatble in with mash this way and the kids eat them without really noticing. Also they like root veg cut into chip shapes and then tossed in a bag with a little oil and some garlic puree until fully coated (use less oil this way and adding the garlic does away with them wanting salt/seasoning) and then baked on a baking sheet until crispy.

 I bung almost all leftover veg in the oven, drizzled in oil, garlic, herbs, whatever, wrapped loosely in foil, for abou the same length of time of time as the rosted tatties. I don't pre cook them. The leeks are yum, and I always shove in some onion.
I ave a dodgy H, so sometimes I will sound dead common, on occasion dead stupid and rarely, pig ignorant. Sometimes I may be these things, but I will always blame it on my dodgy H.

Sorry, I'm a bit of a grumble weed today, no offence intended ... well it might be, but I'll be sorry.
