Nigella's Gooey Chocolate puddings
125g best quality dark chocolate, finely chopped
125g unsalted butter
3 large eggs
150g sugar
35g plain flour, preferably Italian 00
Butter and flour for preparing ramekins
Method:
Before you’ve even taken your coat off, put the chocolate and butter in a bowl and suspend over a pan of simmering water. Whisk every now and again until melted. In another bowl, whisk together the eggs, sugar and flour until just blended. Gradually whisk in the melted chocolate and butter. Set aside to rest.
Grease four 250ml ramekins with butter and add flour to cover the butter, tapping the ramekins to get rid of the excess. Preheat the oven to gas mark 6 / 200 deg C about half an hour before you want to eat pudding. And i’d leave cooking them until you’ve finished the main course. It doesn’t matter if there’s no food on the table for 10 minutes, and these do have to be done on the last minute.
So pour the mixture into the ramekins and put them on a baking sheet in the oven for 10-12 minutes, until the tops are firm and cracking slightly and the edges set. Serve immediately and consider providing a jug of cold, cold cream for people to pour into their pudding’s hotly deliquescing interior as they eat.
I've only ever made individual puddings (saves people fighting over it) but I should think you could do one large one. Would probably take 20 -25 mins at a cooler temperature (knock 10 degrees C off). i think you need to experiment regularly from now on.

Wow thanks for that, I am drooling as I type! I was thinking of serving them with a dollop of really nice proper vanilla ice cream, the sort with the black bits of the vanilla pods in them!
I was thinking that you would probably be able to whip up the mix and leave it sitting there, then just pop them in the ramekins after the main course, then by the time you've tidied away the plates and got them in the dishwasher, then the puds should be just about done! Sift over some icing sugar, drizzle the plate with some raspberry coulis, sit the pud in the middle, and dollop on the vanilla ..... I just need to go and wipe my chin ....

they'd let it cook too quickly. you need the thickness of the ceramic to protect the mixture.0 -
right,never thought of that, I will have to have a look round for some nice cheapie ones, maybe get some in morrisons, they usally have nice white items that are good quality and not expensive!

have you seen the stuff in the papers about women on low carb diets losing their memory! Try looking at the Mail online, its on there I think! I have no memory and I eat carbs so dunno how I would be if i cut them out :rotfl: :rotfl: :rotfl::hello: :wave: please play nicely children !0

Approved food did have choc pudding mix with runny chocolate. They were yum. They came with normal paper cases. The choc in them was little pellets and you melted it and just added it to the mix before baking.
Turned out really nice and the runny melted chocolate was lovely. So, based on that, I think you can just make normal chocolate cake mix and add melted chocolate before baking,0 -

To be honest, my memory has always been shocking - I haven't noticed any difference when low carbing.0
