Hi skintchick - have you had a nosey at the Bero site? Check out this link: http://www.be-ro.com/f_insp.htm then click on cakes and you'll find Rock Buns (recipes are in alphabetical order).
there's lots of good basic recipes on that site.

Rock Cakes
8oz SR Flour
4oz Margarine/butter
3oz sugar
6oz mixed fruit
1 egg
2 tbs milk
Method
Rub margarine and flour into breadcrumbs
Rub in sugar and mixed fruit
Mix beaten egg and milk
Place 6-8 spoons of cake mixture onto a greased baking sheet and bake at 160 for about 15-20 mins (until golden brown)
I usually make double or treble the amount and freeze the left overs. I take them out frozen in the morning for lunches.
They're also nice if they're warmed up in the microwave.What goes around - comes around

Also just unearthed my foolproof truffle recipe here goes
2oz plain chocolate
2 tablespoons fresh double cream
1teaspoon vanilla essence or rum, or sherry
8oz sifted icing sugar
Choc vermicelli/cocoa powder
break up choc into basin standing over a pan of hot water[ make sure basin bottom does not touch water].
Leave to melt stirring once or twice
Add cream and essence /rumsherry. Gradually stir in icing sugar
Mix well. transfer mixture to plate. Leave to cool until firm enough to handle [about 1 1/2 hours]
Roll equal amounts of mixture into balls [approx 18]
Toss half in vermicelli half in cocoa powder.
Transfer to little paper cases [optional]
I
use thevalue plain choc as surprisingly it is higher in cocoa solids than more expensive store/branded choc.

thanks for the recipe! any idea how far in advance these could be made for Christmas presents and how long they keep for? (barring them all been eaten straight away!) I'm not sure when I'll see some of the people I want to give them too but I'd rather make them altogether in a large batch...

Hi Pink_Fairy, I use the date on the cream as a guide. I usually work on a couple of days before the best by date for the eat by date. Try to get your cream with the longest date possible. I alsways reach right to the back of the display [in the hope that the staff have used stock rotation properly] and check dates0
