Baked Potatoes

Hi, some clever-cloggs has thown away the two large spuds I had been wantig to use for baked potatoes for dinner tonight. I have raided the cupboard and I found eight small white spuds. I was thinking of baking these, two would be reasonable sized but two would be quite little, like a large new potatoe. Has anyone done this before, do u think they will bake ok??

    I've done this lots of times too. Just make sure to put the smaller ones into the oven after the larger ones (because they won't take so long to cook) so that they will all be ready at the same time.

    They bake really well. If you do the St Delia thing and rub them with olive oil and roll in ground sea salt they are scrumptious.

    Or as EMPTY PURSE suggests, slice and bake them. If you add a bit of stock, a drop of milk and some rosemary then put a few pats of butter on top before baking it really turns it into something special. If you want to go to town, add a layer of gently fried onions and mushrooms between 2 layers of potatoes.

    Thanks Racy, I usually rub them in some butter before putting them in the oven. That recipe sounds very yummy though were just having them as jacket spuds with cottage cheese fillings tonight, thursday nights are soooo busy I need something VERY easy to make for dinner!

    I normally put my baked potatos in the microwave for a few minutes, to start them off, then finish them in the oven (i like them to go a little crispy). The smaller potatos would only need a couple of minutes!!!
