Xantham Gum

I accidentally received some xantham gum instead of another item in my parcel from a wholefood company.Rather than waste postage sending it back can anybody tell me if I can use it in everyday cooking.I have googled it but can't find any real practical uses or recipes.Anybody got any tips.Thanks.

I use it when I'm making gluten-free recipes- it helps to stick gluten free bread and pastry together- so if you have any friends who can't eat gluten it might come in handy...! There's probably not much point adding it to regular flour as the gluten does the job just fine.0
