I have some strawberries languishing in my fridge that have seen better days as they were forgotten about in the back. Will they be okay to make jam?
Strawberries are known for being light in pectin, and this reduces even more when they're over-ripe. You may need to add extra pectin (or lemon juice) to assist the set. Don't worry about a "soft-set" though, you can always make a coulis for ice cream
