    Post no. 8 contains a ginger biscuit cake that is yummy. You do need to whip the cream but you could buy it already whipped, use a fork or invest in a whisk (they really are quite cheap). Basically it's just ginger biscuits, orange juice and whipped cream, no measuring involved :)

    How's about this ...

    ETON MESS

    Serves 2

    INGREDIENTS

    .450g of fresh strawberries
    1 tablespoon of sugar
    250g of meringue
    250ml of cream

    METHOD

    Wash the strawberries, remove any stalks and chop them into quarters. Break or chop the meringue into rough 2cm (1 inch) pieces

    Put the strawberries in a [STRIKE]bowl[/STRIKE] container. Sprinkle over the sugar. Mix together.

    Pour the cream into another [STRIKE]bowl[/STRIKE] container. Lightly whip the cream (with a fork). Don’t over-do it: it should still be pourable.

    Add the strawberries to the cream, or vice versa. Add the meringue pieces. Mix together and serve.

    ADDITIONS & ALTERNATIVES

    Use ready-made meringue, especially if it’s broken and/or reduced in price.
    The acquisition of wealth is no longer the driving force in my life. :)

    All my ideas seem to involve a whisk. If I were you I'd seriously consider investing in a cheap whisk.

    ginger biscuit pud (probably has a proper name but can't remember it)

    Get a packet of gingernuts. Get some alcohol -rum is good. Whip lots (a pint) of cream with a fork if you haven't bought a whisk.

    Dip biscuits in rum, sandwich together in pairs with the cream. Then sandwich the pairs together to make a sausage. Cover with the remaining cream. Chill.

    Banoffee Pie?
    You can make the pie base by crushing digestive biscuits and pouring some melted butter into it and baking for 10-15mins. Or you could cheat and buy a readymade pie/flan base.
    Then just pour caramel on top - you can buy caramel in tins (same section as the tinned Condensed Milk) or you can make your own caramel buy boiling an unopened tin of condensed milk in a saucepan full of water for 4 hours.
    Cover the caramel in sliced banana, grate some chocolate (or even sprinkle some cocoa powder) and then whipped cream around the edges - with no kitchen equipment whatsoever you could just buy a can of whipped cream.

    That was my staple "camping" dessert, made in the middle of nowhere with hardly any utensils, and absolutely delish! :)

    Strawberry flan - using a pre-made sponge flan base, sacket of quick gel (add to boiling water) and sliced strawberries. Serve with cream.

    Summer pudding using frozen mixed berries, bread, sugar. Served with cream.

    Only problem now is that my virtual basket now has the ingredients for about 10 desserts in it. Just have to make a decision before the 17th or I'll get it all delivered! There's nothing else in my trolley ATM, so if I can't get my behind in gear I may just be eating dessert for 2 weeks (actually that's not a bad plan:rotfl:)

    One more quick Q, can I "whip" cream with a cappuccino frother? I have this one

    beat me to it - that was what i was going to suggest - my brother asked me yesterday if i would make banoffi instead of apple pie for those (him and dad) who dont like christmas pud.

    Laziest pudding in the world that I do when guests come unexpectedly:

    Hot peaches in brandy

    Put a tin of peaches (whole not sliced, sold in Lidl) in a saucepan
    Splash in some brandy to taste
    Heat through until quite warm
    Serve with cream or ice cream

    My Naina Betty always said 'nothing I couldn't do with a fork' to all kitchen gadgets!
