Using up left over goose

Hi,
I am planning on cooking a goose for Christmas lunch as ALDI has them. As there are only three of us I need some recipe's to use up the left overs.
Anybody have any?

We're having goose, so this got me thinking
I'm going to make goose pancakes for Boxing Day supper (lettuce, spring onion, hoisin sauce), and if there's still any left, Delia's Turkey en croute (with goose instead of turkey
).
Don't forget to save the fat - best thing for roast potatoes, and I'll make stock and soup from the carcase.

Using it like duck in pancakes in one thing that had crossed my mind.

If you haven't had goose before you'll be surprised at how little in the way of leftovers there is. We usually have goose but are having turkey this year. There is usually only enough for one leftover meal. I generally do a Christmas lunch hash -all the leftovers hashed up with the leftover gravy and some alcohol yummy.
Save the carcase and make stock, and render any extra fat you get with it;)0 -
We had goose last night. There were 6 of us and 3 of us had leftovers tonight. There is still a bit of meat. IT was stretched with some sausages rolled with bacon, sage and onion stuffing and sausage meat stuffing,
Have just made just over a litre of stock and there is goose fat too of course. There never seems to be much in the way of left overs and the family likes it cold, so no need to do anything fancy really. We had bubble and squeak and gravy with it.
