Receipe for Foo Yung Please

Had a takeaway mushroom foo yung last night and really enjoyed it until I saw the Bill (lol)

Please can anyone tell me how to make foo Yung & where I can get cheap eggs!!

    Mmm, foo yung is yummy.

    3-4 eggs
    handful bean sprouts
    1 small onion, chopped
    3 mushrooms, chopped
    2 tsp. soy sauce
    Vegetable oil
    1 tsp. salt

    Beat eggs until foamy. Stir in bean sprouts, onions, mushrooms, soy sauce, salt. Heat frying pan. Add 1 tsp. oil. Cook 1 to 2 minutes.

    Of course if you're a meat eater could always add some cooked prawns, cooked chicken, thin slices of beef into the mixture.
    Personally I would leave out the mushroom as I'm not a big fan and I would add in some spring onion as I love it.
    Will have to make some soon myself.
  • If you really heat the pan up when you first put your egg mix in and then turn the pan down a bit to cook them through its really good, personally i don't put onion in and I put quite a few beansprouts but each to their own. If you use soy sauce, you should put just a smidge of sugar in to take away any bitterness.
    Slice the mushrooms thinly and cook them in the oil for a minute or two before adding, really, really whisked eggs .
    Netto do quite reasonable eggs, or any of the value eggs from shops, asda I think aren't too bad. depends if you want them or free range eggs. After getting used to very fresh free range eggs, i'm always disappointed when I break open a shop bought one, however I'm lucky to be supplied with them, before that it was shops own.

    a small dash of sesame oil in the mixture is nice

    & I'll vouch for halloweenqueen's tip, a little sugar makes all the difference to the finished dish :)
