homemade bread help.am i doing something wrong

hi, i have a bread maker and i have made a few loaves but they taste like a cross between bread and cake...how come the bread you buy from the breadshop is so lovely and soft inside..do they use any special ingredients.

    Have you thought of tweaking the recipes for the bread, some people here recommend not as much water or you could maybe add some vitamin c powder also known as bread enhancer. I got some from the health food shop, I found this made a difference and I use Lidl bread flour.:D

    How much sugar are you using? Is it the texture or the taste that makes it like cake?
    It might be worth trying another recipe, just to see what happens.

    You won't be able to make anything like the bread you buy in the shops - unless you buy from a proper artisan baker. The mass-produced stuff is made using the Chorleywood process which gives it the airy texture and no taste. If you are following a proper recipe and it's rising and cooking properly it's probably the way it should be. It can be a bit strange getting used to it if you are used to bought bread, but homemade is far superior.

    Have you remembered to use fast acting yeast rather than normal yeast? I had similar results using normal yeast but had great results using the fast bake yeast.

    Ive just found this link that explains why milk powder etc. is added to bread, thought it would make interesting reading.

    I had this problem and I halved the amount of milk powder and sugar and now have the bread just as we like it.

    I use fast acting yeast so there is no real need for the sugar.
  • Hi I've bought a cookworks Breadmaker. After a couple of tries, I'm almost there.

    Found that being exact with ingredients helps (LOL).

    However bread is still coming out - how to explain - very thick. Not light and airy, not fluffy like bread should be inside.

    Any advice on how to make my bread more fluffy?

    Much appreciated.
