COCONUT ICE - Help please!

Good afternoon everyone.
Thought I'd make some coconut ice for the school fete. But it ended up in a sticky stodge that didn't seem to set.
I used:
340g Icing sugar
397g tin of condensed milk
340g Sweetened coconut.
Mixed it up, seperated the layers for one pink and one white and ended up with sticky gloop. It's not worth cutting up and putting into little bags as it's more likely to hang wall paper!!
Any thoughts?

I've got this recipe too, but never used it, and now I won't
This is the recipe I used last time and it worked for me
3tbs condensed milk
12 oz icing sugar
6 oz desiccated coconut I used 3oz as that was all I had
Red/pink food colouring
Divide the milk, sugar and coconut between two bowls and mix well, adding a LITTLE food colouring to one half to get a pale pink colour. The mixture should be very stiff. The mixture will get firm and difficult to stir but persevere until everything is all combined
Dust a board with icing sugar and shape the mixture into bars and press a white and pink bar together.0 -

I';ve looked on some internet sites and it seems that i'm not the only one having probs! I think it must be trial and error.
As I've never made it before - is it supposed to harden up or stay moist?0 -
i made some yesterday for the first time and much to my suprise came out great (I think due to luck than anything else), i put about 4 tablespoons of icingsugar in a bowel, a packet of coconut (poss 150g i cant quite remember) and stirred in some condensed milk, i tried to keep it really dry but it was too try so i added some more condesned milk. i then lined a tin in clingfilm and pressed half the mixture into it with my fingers, then put (way too much!) pink food colourinng in the other and pressed it on top then wrapped the clingfilm over the top to stop it drying out and stuck it in the fridge over night. its come out perfect much to my suprise! I think it's probably best to add the liquid to sugar to avoid the stickiness. I have also read to add egg white, not sure if this would help but I used to add icing sugar to egg white to make peppermint creams when I was younger.0
