Rum and Raisin Icecream

For many years now I have made a very simple Rum and Raisin icecream from a recipe in a womens magazine. Unfortunately, I have mislaid this very tried and trusted recipe, I wonder if any of you kind people out there have got a recipe they could post on here.

    Rum and Raisin Ice Cream

    4oz raisins with enough rum to cover
    4 eggs separated
    ½ pt cream whipped
    4oz icing sugar

    Beat together egg yolks and icing sugar until thick.
    Whish Egg whites.
    Fold together all ingredients and put into icecream maker or freeze until partially set, re-beat and then freeze till set.

    NB, I never get this recipe frozen very firm, due to the alcohol and sugar content. It is VERY rummy, if you like a gentler rum flavour or want a firmer set you might want to decrease it.

    I made this at the weekend, but just adapted my regular ice cream recipe. Tastes great though.

    Raisins I didn’t measure, but about 3oz, stood in rum for 24 hours.

    2 eggs beaten until fluffy
    1 cup sugar added gradually to the eggs keep beating until light and fluffy.
    add 2 cups of double cream and 1 of milk
    add 1 tsp vanilla essence.

    I have an ice cream maker but didn’t use, put this in freezer returning after 2 hours to stir, when almost set I added the rum soaked raisins.
    There is nothing either good or bad but thinking makes it so.
