Feeling pleased with myself - spring onions and garlic ?

Today I bought 4 x Carrot and corriander soup pre mix fresh veg from Asda - were £1.47 :rotfl: each, reduced to 30p each - made large pot of soup!

Also a £1 box of reduced veg from the farm shop - 2 cauliflowers, a sweet potato, 2 heads of fennel, 4 bunches of spring onions, 3 small peppers, about 6 heads of garlic (starting to sprout :( ) and a stick of brussel sprouts :T
Made potato and fennel soup with 4 pots, the fennel and a bunch of spring onions, some roasted veg with the sweet potato, garlic, peppers. Preped the Sprouts for the freezer for Christmas, and now got 2 caulis for cauliflower cheese (OH has begged me to make it).

So - what should I do with the Spring onions and the 5 heads of garlic?
Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.

    Where the garlic is concerned - how badly is it starting to sprout?

    When I buy mine (packs of three bulbs in a little net), I break them up into the individual cloves and then freeze whole in a small freezer bag. These last me for months. I just take out one or two cloves, let them defrost (doesn't take long) and then prepare however I want them ie sliced thinly, diced or put through that mincer thingy. No more wasted garlic for me ;)!

    Not sure about your spring onions though - suppose it also depends on how far they are 'gone'. Can you use them in sandwiches for packed lunches next week? Trim them and remove the outer layer of skin if necessary - they may last a few days longer. What about a sandwich filling of hard-boiled egg, chopped spring onion, grated cheese bound together with mayonnaise? Or if you're doing a stir-fry just add them into that - or add chop and add them to whatever you're doing in the next couple of days.

    You could make a batch of garlic butter to freeze.

    You could have used the spring onions in the soup.
  • Are you likely to have mashed potatoes in the next few days? You could add chopped spring onions to the potatoes when you're mashing them.
  • Spring onions are great through an omelette/frittata/tortilla, I also always use them in any chinese dishes I make eg fried rice/chow mein (ginger/chilli/garlic/spring onion), they are also good in a risotto or add to salad, potato salad, mash or HM fishcakes HTHx
  • Spring onions on toasted cheese! Big favourite in our house. If I add cherry tomatoes and make it on brown bread I call it cheap pizza ;)
    Must learn not to count chickens before they are hatched!!!!:D

    Spring onions on toasted cheese! Big favourite in our house.

    My daughter and OH had this at teatime just yesterday! She's only 2 but wolfed it all down - even the crusts :j

    For supper, OH and I had a stir fry made with our leftover not-so-great-looking salad, i.e. celery, a few spring onions, mushrooms and lettuce, with sesame seeds then some lemon juice, ketchup and soy sauce to finish it off. We had it with rice and it t'was yum! Will definitely be making it again.
