I guess it depends on what sort of cookies you're after. I like this recipe:
100g chocolate cut up into chunks
125g melted butter or marg
100g granulated sugar
75g brown sugar
1 egg
2 tsp vanilla extract
150g plain flour
½ tsp baking powder
pinch of salt
Oven should be 190C ish
Put the sugar into a mixing bowl and pour the butter / marg on top. Mix well.
Add the egg and the vanilla and mix well
Pu the flour, baking powder and salt into the mixing bowl and stir them in, then add the chopped chocolate.
Put heaped pudding spoonfuls of the mixture over the lined baking sheets, leaving plenty of space in between them
ake for 8-10 minutes.
