Potentially Delicious (AND filling) Lentil Recipe

i'm looking for a recipe that will not only taste good, but will substantially fill me up. i'm sort of toying with the idea of being vegetarian, and economically so, so any ideas on what I can do with my bag of chick peas and green lentils to make a flavoursome explosion of natural goodness? any ideas would be very welcome!! i've tried humous, but in the absence of tahini, and with all the will in the world to bludgeon sesame seeds into a paste, it was a little lumpy and bland. so i'm onto the next suggestion - if anyone has any!!

    On a serious note I always made curries with lentils and chickpeas, throwing in other veggies I had leftover. It was a very good way to use up scraps of veg that aren't big enough for a portion on their own, and it can be bulked out a little further with tinned chopped tomatoes and/or chopped potatos. It also froze well so when I made that at uni I'd do enough to freeze a few portions for those dys when I was too tired (...ahem...hungover...) to cook!

    Good luck with the vegetarian route, there are a few websites that offer recipe books to veggies, some of those may help!

  • I've recommended this before but I love this recipe for Lentil Enchiladas. She uses chicken stock but I've made it with veg stock and it's just as nice, and it's really, really tasty. The salsa you have with it is good too, really fresh tasting.

    It's really not too difficult to be vegetarian. You could bulk up vegie mince with lentils for shepherd's pie, lasagne etc etc, I also have found (very recently, lol) that putting loads of different veg in the food processor is good to bulk this up, I reckon you could completely substitute the mince with lentils and veg, oh and breadcrumbs if you're short of anything. I just used to use a little veg and loads of the vegie mince before but it's much cheaper the new way...though yet to try the lentils, that will wait until next week!
