Cheesy Red Rice recipe?

Hoping someone can help, I got a recipe from a thread ages ago for Cheesy Red Rice and now I can't find it *pulls hair out* 
I've checked the indexed threads and used the search function but no luck. It was basically rice, onions, chopped tomatoes and stock, but it's the quantities I need as I can't seem to get it right now.
Help!

hi i remember reading this recipe think is was on meals for 50p......im sure the jist of it was cook some rice in minimal liquid and a tin of tomatoes until done then put in an oven proof dish and bury cubes of cheese in the rice and bake for a bit until cheese has melted and bubbled hth tessonwards and upwards0

Cheesy Red Rice
2tbsp oil
2 onions chopped
12oz long grain rice
1 3/4 pts veg or chicken stock
1 tin chopped tomatoes
6oz cheddar cheese, 2 inch cubed
Fry onions until soft, stir in rice until coated in oil, then add stock and tomatoes and season with S&P.
Bring to the boil and simmer for 5-10mins until slightly reduced.
Pour into and ovenproof dish and dd cheese cubes. Submerge some and leave rest scattered on top.
