Hello lovely Old Stylers!
I need your help. I am making a cake for my friends birthday and have bought the Blade Traybake tin from Lakeland. Does anyone have a recipe for a sponge cake that will fit the tin? I am planning to make the cake tonight and decorate it tomorrow (butter icing and sweeties!!) ready for the party tomorrow night. Will this be ok do you think?
Thanks,
Coco xx

What size is your tin?0

A three egg recipe works for that tin - weigh three eggs (in their shells) and use the same weight SR flour, seived, sugar, fat (I use Stork, you can use butter or marg - but not reduced fat,) and 1 tsp vanilla extract. Substitute 1/2 oz flour for cocoa for chocolate cake.
Butter icing and sweeties sounds fab! I have also done an orange cake, rind grated in the sponge mix and icing made with the juice, decorated with those little sugar flowers you can get0 -
Can I ask what size eggs you use please Morwenna0

Large eggs, but it doesn't matter if you use that recipe because the amounts are directly in proportion. (The weight of the eggs drives the other ingredients.)0

Slight tangent - I have a tin that measures 8 inch square and 3 inchs deep, I want to make a sponge in there to decorate with fondant icing and I was wondering what quantities would be the best for this? I can freeze the cake before hand which I presume makes it easier to put the icing on (do I defrost it first?!)0

Hi Morwenna,
thanks for the recipe. I have only got medium eggs, do you think I should use 4?
How long would the cake take to bake?Light Bulb Moment 01 May 20070
