Being made redundant, start a temp position whilst in consultation?

I am being made redundant but there is a minimum 30 day consultation period which is ending soon.
I have been offered temporary work starting just after the consultation period 30 day mark is reached.
It seems that the consultation may drag on a few weeks.
I am due a redundancy package, so don't want to resign for the sake of 2 weeks overlap. Both sides are inflexible, so legally, if my hours are flexible, can I do both for a few weeks?
