Please help meal ideas for dd (allergy sufferer)

Please help my dd (10) has a serious potato allergy (including potato starch) she has now been told that she has a whole host of other allergies:
Peanuts
Hazelnuts
Cashew nuts
Soya ( including lecithin, soya sauce, tofu)
tomato
peppers (including black pepper, white pepper, paprika, cayenne, chilli, five spice)
as well as pototo (but can eat sweet potato):eek:
She has to eliminate these totally from her diet for the next couple months. Now I can make cakes, biscuits, bread at home. But I am really stuck with main meals, I already cook from scratch because of her potato allergy but many of our recipes include tomato and peppers. Please please please could anyone who can think of any suggestions please post some ideas (moneysaving ones if possible).

I do sympathise, many members of my family have allergies & when we have a family do everything is labelled ‘dairy free’, ‘gluten free’, ‘nut free’ etc.
Check out Allergy UK – www.allergyuk.org for information on food allergies; it recommends a book called Allergy Cooking for Kids that you may be able to get from the library. Its also worth doing an internet search – I found www.foodallergykitchen.com which seems to have lots of recipes.
And think about what you still have, meat; poultry, fish, dairy, eggs, rice, pasta, most veggies, herbs … so beef stew with root veg, tuna/pasta bake, cauliflower/macaroni cheese, chicken pie … Believe it or not a friend of mine with a tomato allergy loves pizza & orders it without the tomato sauce! And curries don’t necessarily need chilli, it was only introduced to India by the Portuguese & a lot of Indians don’t eat it.0 -
I used to look after a child with potato allergy (and dairy, soya, tomatoes, kiwi fruit and avoided nuts because of the rest) and I often made sweetcorn fritters as a potato alternative. Cook some sweetcorn, mash it as much as possible, add a couple of tablespoons of plain flour and mix to a thick paste with water, add a little seasoning then dollop spoonfuls onto a hot frying pan (a little oil may be needed) and fry for a few minutes each side. He loved them. You can use tins of creamed sweetcorn for a smoother texture or blitz the mixture in a processor.I like to live in cloud cuckoo land :hello:0

Pies, flans/quiche, casseroles, risotto, meals with a white sauce. What you also need are some homemade stocks to avoid the potato starch and pepper. Google for recipes for beef, chicken and vegetable stocks. These can then start as a good base for many meals.
Scouring some recipe books the following may be a start to planning a menu:
Chicken Cordon Bleu
Parmesan Chicken Bake
4 Cheese Pizza (just top pizza base with a variety of cheeses - do not use tomato sauce)
Onion tarts with goats cheese
Onion, squash & bacon risotto
Risotto with chichen and ham
Leek & onion tart (no pastry - this is an all in one savoury slice with a rich flavour which could be served as accompaniment to other dishes)
Steak and Kidney pie with mustard and bay gravy
Smoked bacon and bean stew
Roast duck with juniper
Chicken leek & parsley pie
Caramelized onion tart
Quiche lorraine
Lamb pie with pear and mint sauce
Chicken pie with mushrooms

I'm sure others on here will come up with a few more ideas that do not involve quite so much pastry!0 -
dishes that avoid peppers and tomatos, how about pasta primavera (peas and freash beans in a creamy sauce, yummy.
I guess the easiest way to convirt recipies is either just to omit ingredients or to replace them with something which does a similar job. I played around with adding apple to sauces as I had to cut out alot of veg (tomatos peppers and spuds is pretty much all I can eat!!!). Apple works quite well instead of tomatos to provide the tang and sweetness and liquid as they are quite a similar cellery may do instead of pepper as is quite tangy. Often the tomatos in a recipy add bulk and liquid so just add what you have available.
eg: you could do a pizza by making a sauce contaning onions, garlic, mushrooms, corgettes, grated carrots and apple, blitz it up a bit but leave some bits for texture add oregano and basil for pizza flavours then plenty of cheese and favorite veg / meat on top like mushrooms, sweetcorn, etc.
this base could also be used for pasta sauce etc (just add mince).0 -

I can sympathise as my ds has a nut/seed/ egg allergy. Don't worry you will soon become a pro at finding alternatives! If you already cook from scratch you are halfway there.
Eggs seem to be a good basis for you eg quiche, omelettes, cheese pies etc
Also pastry would work; with chicken, beef etc as would stews.
You could make all the usual recipes but substitute the sweet pot. so shepherds pie, cheese onion potato pie would all be ok .
sausages and mashed sweet pots.
you can still cook pasta but go the creamy route eg ham, cream , pea ,cheese.
Chargrilled veg would also work;)0 -
A tip, search for allergy books on amazon/ebay then look for them in your local library, I got loads from ours. As with all library cook books I just copy/scan/write out what I will use and pop them in a folder.One day I might be more organised...........
