Sandwich fillings/dressings with left over Christmas food

Can anyone recommend a good sandwich filling, especially ready made dressings for the Christmas period? Would be nice to get some good tips for making sandwiches with the left over turkey, Beef and Gammon.

    I had about 50 people for afternoon tea on Sunday (farewell do for a friend) and made sandwiches with some leftover roast chicken and fried rashers of bacon but gammon would work just as well.

    I minced the cooked meat up in my magimix - just enough to make a mince like texture not puree! Then folded in some HM mayo. Into HM sliced bread with lettuce and tomatoes.

    Everyone raved about them!

    Gammon/ bacon with egg mayonaise is nice. Just use scrap bits.

    Chicken, bacon and mushroom with a dash of mayo (use your turkey instead)

    Beef, onion and mustard


    There is a sandwich thread somewhere that will be pointed out by somebody who knows where it is.

    super idea. I might try mincing the turkey and adding the bacon(gammon) bits for texture. :T

    Gammon & chutney / relish
    Beef & mustard & horseradish
    Turkey & cranberry sauce

    Also, don't forget that you can freeze the cooked meat for butties later in the year...we currently have some slices of roast beef & ham-in-coke in our freezer :)

  • How about Brie with grapes or Brie with walnuts...the later is my favourite.

    Also these are nicer in part baked baguettes and if you get them from Lidls they are 45p for a pack of two...although I may have noticed them down to 39p last time I got some.

    Oh the other one I've just remembered...we have turkey/sausage and bacon/stuffing and cranberry sauce sarnies over xmas too. ;)

    Ohhhhh, part baked bread sarnies:D...I've heard marinara sauce is nice in sandwiches, could you add marinara sauce to this?

    Goes a very dark colour but makes it yummy! It's a Nigella recipe......

    lefover roasted veggies can be lovely in a sandwich, especially with a bit of hummous and some salad leaves (something like rocket) or a bit of grated carrot to freshen it up a bit.

    i also think that cold bread sauce is great in a sarnie if you're eating up christmas meats, but i suspect i might be a little weird in that...

    the part-baked baguettes is a great idea, really easy and doesn't feel like you're eating left overs any more!
  • My favourtie has to be what I call a heartattack sandwich! Totally not OS but very scrummy -

    A nice white bap with leftover turkey, stuffing, cranberry sauce, bacon, sausage & a bit of cheese to finish it off!

    Very piggish but gorgeous!!!
