Hi, I have only used left overs and just pass it through the largest plate, great for pies, patties, pasties etc. Once I have minced I then add the flavourings I want depending on what I am making. So for something like quick meatballs I would add a bit of chopped fried onion, salt pepper and orgegano, then fry off gently and add the tom sauce.
sorry forgot to say- also use an egg to bind it all!

The butcher van at my local market sells frying steak quite cheaply, personally I don't use it as steak (unless I'm braising it as it's a bit tough) but it makes the most fantastic mince. I just cut it up into chunks and put it through the coarse blade on my mincer. It works out more expensive than normal mince but cheaper than steak mince from the butcher or supermarket.Dum Spiro Spero0

Use chuck steak, which is reasonably cheap but doesn’t have too much fat.
Also, if you've had a bad day, mincing your own meat and/or squeezing the mince into meatballs or larger meatballs to be flattened out into beefburgers is a great stressbuster. Imagine it's the person (or part of the person) who spoilt your day.The acquisition of wealth is no longer the driving force in my life.0 -
