Celeriac and Apple salad

I'm sure I did a celariac and apple salad last year but cannot find a recipe now. I expect I can make it up. I'll probably shred the celariac, blanch it for a couple of minutes in boiling water, refresh it in cold and then make a dressing with vinegar and yoghurt maybe some parsley but I still think I had a recipe.

Does anyone here have an idea for celariac salad?

    This is from Jamie Oliver's The Return of the Naked Chef (p77):
    1 celeriac finely sliced;
    1 head of celery finely chopped;
    Handful of chopped parsley;
    Handful of pomegranate seeds.

    Mix the above in a bowl, season and dress with an olive oil and lemon juise dressing (2 parts lemon juice to 5 parts olive oil, salt & pepper).

    (Apple and celeriac mash seems to come up a lot...sounds like a great combination!)

    Did they tell you to separate the juicy bits from the skin a pith it's easier to do it in a bowl of cold water. Just quarter the pomegranate, and hold it under the water and you can separate out all the bits quite easily and not end up with sticky fingers.

    Did they tell you to separate the juicy bits from the skin a pith it's easier to do it in a bowl of cold water. Just quarter the pomegranate, and hold it under the water and you can separate out all the bits quite easily and not end up with sticky fingers.

    Actually OH did that job and seemed to have no problem - I'd been warned by friends that it could be tricky! ;)
