chicken stock from raw chicken neck?

I boiled lots of raw chicken neck in a pan. Is the resulting stock hygienic to consume as the water from this uncooked chicken neck was not pre-boiled and discarded initially?

  • I am not really sure what you are asking - surely at one time the water and chicken were raw - unboiled. You have boiled them up to make stock and so now they are "clean" and "hygienic".
    If you are referring to skimming the scum? off the water and discarding this - this would only interfere with the taste of the stock rather than it's safety to eat.
    Unless of course the chicken was not clean to begin with (you hadn't cleaned out the insides and it was covered in poop for instance) then I wouldn't eat this, but lets see what the great minds of OS make of this. lol
    Maybe if you made it clearer exactly what you did then we could be clearer in our advice. ;)

    'Just to clarify, would any germs from human handling of the neck or cross contamination with other parts of the chicken be destroyed in the boiling process and therefore mean the stock is hygienic? Thanks.

    Yes, of course.
  • Most definitely, the germs will be long gone. If in doubt, boil the stock at a rolling boil for a couple of minutes and that will be enough to see the blighters off.
