keeping peeled spuds?

I peeled a load of spuds yesterday planning to cook some today but ended up not doing that. Can I keep them (in water on hob or in the fridge) until wednesday when I can make irish stew? or do I have to throw them?

Yes, in water, best in a sealed plastic tub, in the fridge will be fine.
Just make sure they're covered in water in the tub and it's sealed.0 -
Yes, you can keep them, but do as PasturesNew advises, otherwise the potatoes will turn black.
See plenty of catering establishments do this on a regular basis0 -
I have just chopped up some extra peeled potato, covered well in water and stored in a plastic container in fridge.
I often used to do this when doing wedges, soak o/n in water, as somehow they go fluffier next day when roasted.

I used to store peeled potatoes for 2 or 3 days in the fridge but I was told I should change the water daily, apparently they can go soft and mushy otherwise?
I think this was the recommendation from the tupperware demonstrator (in the 1970's!) who sold me the storage tub for them!
... don't throw the string away. You always need string!

Years ago when I had huge amounts to do at Christmas I always used to prepare my potatoes in advance and put a small piece of coal in the cold water. My MiL said it kept the water 'sweet'. It worked too!0
