Why not wait till you are out together, just the 2 of you, and plan something nice like a weekend away...in 5 years time! If you are dead set on Leeds then I 2nd the carousel idea (no singing you'll never walk alone though). Or you could go to Elland rd for nthe next round of the FA Cup...oh, no, hang on a sec...

Other ideas that might fit in with your plan could be to get her by herself and going for a glass of Champagne in Epernay (champagne bar). That could work for after Millenium Square as well, be it carousel or otherwise, as it's close.
