Vegan fudge?

Has anyone any experience of actually making vegan fudge out of soya milk?:rudolf:

I have found a recipie on the vegan family website (http://www.veganfamily.co.uk/fudge.htm) but dont want to use a sugar thermometer as I dont have one.

I was meant to buy some for a present for my mum (who is a vegan) but it was expensive plus I had to pay P&P.

If anyone knows where I can buy some over the counter please let me know this also :snow_laug

  • I have! Made the chocolate one though using soya milk and carob. It was ok, but id recommend making it and eating it ASAP because it went rock hard by the next day!

    (I haven't tried making this, btw, though I might now I've found it!)

    Otherwise, try Holland and Barratt or another health food shop. It may be marked as dairy-free fudge rather than vegan, but you should find some in any largish store - in a bar probably, but you could always cut it into squares yourself!

    Or, if you fancy giving it a go, you may be able to adapt a normal fudge recipe to vegan, as long as you're not substituting too many things. Use sweetened soymilk instead of cow's milk, dairy-free marg instead of butter, and Alpro do a good single cream substitute (it was called Soya Dream, but I think they changed the name in the last few weeks to something like 'Dairy-free alternative to single cream'. The original was much catchier, imo!). It's about 69p for 250mls and you can find it in most supermarkets (in a longlife carton, not fresh). Blended silken tofu (NOT regular tofu) *could* work as a substitute for heavy cream (but I haven't tried this).

    Anyway, hope some of this helps. There are lots of places on the internet to buy it, but it's too late now for christmas, I guess. :)
