recipe help please?

hi all i was very kindly given 3 ducks and a huge leg of venison along with venison steaks and i really dont know what to do with it lol!!!
i also recieved salmon steaks which are going to be for tonights tea!!

luckily my feezer is just about empty but i would like to use this up soon as possible and not just put it in the freezer and forget about it! no doubt now i have taken this there will be more to follow! thanks in advance!

  • you could braise the venison or make into a pie, Duck is nice but doesn't yield much meat, best to roast it and shred the meat (the best way to roast duck is to pierce all over with a skewer and cook in a roasting tin with a rack, fill the roasting tin with water or you will get fat splashing all over the cooker)

    The venison leg can be either braised slowly or roasted. The steaks, just treat them as you would a normal beef steak. I usually fry or grill them and serve with game chips on top.

    As Butterfly Brain has said a whole duck doesn't go very far (feeds three to four people at a push) and is very fatty so needs to be cooked on a rack over your roasting dish. Keep draining off the fat during cooking and save it because it makes fabulous roast potatoes.

    cazcoob - I was also presented with a huge haunch of venison last year (a peace offering from a heels-dragging builder). I looked it up in one of Hugh Fearnly Whittingstall's books and it said you can simply roast it, just as you would with a leg of lamb or a joint of beef. I did and it turned out delicious, it wasn't difficult to do at all. It makes a superb roast and it would be a shame to cut it to bits to make pies or stews.

    thanks thats great!!! was worried about putting it all in freezer to forget about it or just not use it!!! think ill roast the ducks and shread them and use the venison as a roast!

    FIL and his brothers have been given permission to shoot on land nearby and they have been coming back with a few things that i dont think i would have went out to buy lol! so we are giving everything a go and eating like kings esp as OH is a builder and we have no work at the moment!

    just had the salmon and is was lovely!! we had enough to feed us all and there is still another meals worth in the freezer. OH uncle had caught a 24lb salmon and has been giving it away due to no room in his freezer not that we were complaining!!
