Recipes to use up cointreau?

Make margaritas! Failing that, how about using it in a sorbet with fresh orange juice, lime juice, and zest?

You could make something along the lines of a banoffee pie but replace the bananas with Strawberries soaked in Cointreau.

Cook up your condensed milk as usual or buy the ready made one, put it in a cheesecake or pastry base. Meanwhile soak the strawberries in cointreau.....the longer the better, often I leave it overnight, then pile them high on the toffee base leaving a gap of a couple of inches around the side to fill with whipped cream.

The juice left from the overnight soaking makes a nice liquer in itself.
