    I use this one for small cakes, recipe HERE, and I like the idea of not using the baked bean cans! Fruit tins seem like a good idea! This recipe also has a link to a really good video on how to properly line a cake (bean or fruit!) tin.:T

    well have made my first fruit cake. added some brandy feels slightly tacky, will feed again in a fortnight. hope its nice, as it took almost 5 hrs to cook lol, lots of effort. bit into te leftover sultanas, and found pips??? is this ok???never see any seedless versions....

    MAde the above Bettys cake at the weekend - smelt SO good! Have been using the PEdro Ximinez sherry mentioned by Nigella in her latest book, my god, it was delicious. Mr 999 compared it to liquid treacle toffee - we had several glasses to test it!

  • Hi - I use all sorts of empty tins. I turn the tin upside down afterwards, open the can and push the cake out. If you put more mixture in, so you get a tall cake they make lovely Christmas candles - very easy to decorate! Large H-z tom soup tins are a great shape. A tip from a baker - if you put 1/2 inch of water over a cake that takes hours to cook, it prevents it from burning (esp the fruit) but doesn't spoil the cake. It works for me.

    Jamtart your Christmas cake is fab.
    Must get my act together and bake one, though will prob do the smaller ones as couldn't decorate it for 4 hours.
