Muffin Recipe needed please

Hi,
Looking some good reciepes for fluffy muffins. My GF has made them 3 times now and they always come out a little flat topped and the mixture is very close and now fluffy.
So looking for some tips that we can get these right

I've tried a few of the different recipes that Pink has directed you too and can throughly recommend them.
Some tips that may help:
Mix the dry ingredients separate from the wet. Then mix them together very gently and bake immediately - don't let the mix sit around. I think this has something to do with how the raising agents (baking powder/soda) works.
My muffins are never as "muffin-looking" as those huge shop-bought ones. I think my cases are a bit smaller. But they all rise quite a bit and they all taste pretty good though0 -
As Alex said, mix gently, the batter should be lumpy! My Muffin bible (Susan Reimers book) recommends using a metal dessert spoon and mixing for no more than 30 seconds. It also says that rather than falling ribbon-like off the spoon that it should plop in loose globs.
Over-stirring is the thing that makes muffins dense so although it feels really wrong to do so, mix quickly, don't aim for a smooth batter and get it into the tins quickly.0 -
Thanks for the tips and help with the muffins. I made some last week and they were very dense. I think I overmixed and I put too much dried fruit, nuts and seeds in overkill is my middle name. Do love muffins tho. Had a wonderful recipe for bran muffins years ago in Canada which were actually good for you wish I could find it now but will look in the recipes that were advised on here.
