Potato Croquettes Recipe

Hi to all.
Here's a recipe I use to make potato croquettes, it's easy to do, they taste great and are useful for using up pre-cooked/old potatoes.
Of course they save money over buying factory made shop sold versions and also reduce a bit more plastic packaging going to land fill.

1 Pint Cold Potatoes
2 Tablespoonfuls Butter (soft)
1 Cup Stale dry bread crumbs or fresh otherwise (dried out)
2 Egg Yolks (well beaten)
1/2 Teaspoonful Salt
Just mix the potatoes with the butter and salt and mix well.
Stir in 1 Egg yolk and then push mixture through a sieve.
If desired add some fresh parsley(1 Teaspoonful) or pepper can be added and mixed in.
Roll into balls and then cork shapes.
Now dip in remaining yolk and then roll in breadcrumbs, then repeat this process.
Fry the croquettes in deep hot oil 190’c until crisp and brown, drain on paper, serve and enjoy.
