    Hi there,

    I have made a fish recipe by Ainsley Harriott quie a few time which is very nice:

    You need: chunky fillets of white fish (cod, haddock, coley etc), tomatoes, a few olives, olive oil, breadcrumbs, some fresh / dried basil if you fancy it.

    Put the oven on to warm at about 180 degrees.
    Put the fish fillets in a baking dish and season them with salt and pepper and a drizzle of olive oil.
    Slice the tomato thinly and layer on top of the fish
    Chop a few olives and sprinkle over the fish / tomatoes
    Sprinkle the breadcrumbs and dried basil (if using) over the fish / tomatoes / olives
    Drizzle some more olive oil over the top
    Bake in the oven for 15-20 mins (until the breadcrumbs are crispy and the fish is cooked through.
    If you are using fresh basil, sprinkle it over at the end.

    This dish is very nice with crusty bread or mashed poato and a geeen salad.

    FISH CURRY

    Serves 2

    INGREDIENTS

    300g of white fish*
    1 clove of garlic
    1cm (½ inch) piece of fresh ginger
    1 onion
    ¼ of a teaspoon of chilli powder
    ½ a teaspoon of cumin
    1 tablespoon of garam masala
    ½ a teaspoon of turmeric
    1 tablespoon of vinegar
    200ml of milk
    50g sachet of creamed coconut
    1 tablespoon of sunflower oil

    DEFROSTING

    You can cook the fish from frozen.

    METHOD

    Chop the fish into 2cm (1 inch) pieces. Peel the garlic and chop it into tiny pieces. Peel the ginger and chop it into tiny pieces. Peel the onion and chop it into thin slices.
    Mix the chilli powder, cumin, garam masala, turmeric and vinegar in a cup to make a paste.

    Warm the milk in a saucepan on a low heat or in a jug in the microwave. Add the creamed coconut. Stir until the coconut has dissolved.

    Put the oil into a frying pan on a medium heat. Fry the garlic, ginger and onion for about 3 minutes. Stir frequently to stop it sticking. Add the spice paste and cook for another 5 minutes. Add the milk and coconut, and the fish. Stir thoroughly.

    Bring to the boil, then turn down the heat until it is just boiling (simmering). Cook for about 15 minutes until the fish is firm and opaque. Stir gently from time to time. Check the liquid level from time to time and top up if it starts to dry out.

    ADDITIONS & ALTERATIONS

    Use 200ml (½ a 400ml tin) of coconut milk instead of the milk and creamed coconut. Use sesame oil instead of the sunflower oil.

    The quantity of chilli powder above makes for a mild curry. For a medium hot one, increase this to ½ a teaspoon.

    * Use cod, coley, haddock, hake, ling, plaice, pollack or whiting fillets. Use unsmoked and undyed fish, because the spices give all the flavour and colour required.

  • Another fishy tip. Sometimes, you will see a whole salmon reduced to silly money, just to get rid of it. But where will you put the thing? Simple. You don't. Get the fishmonger to fillet it for you and bag them separately.

    PS. Poached fish, mashed potato and mushy peas. The world's healthiest version of fish 'n' chips!

    I visit Morrison's regularly and always look out for the reduced price fish. If you can't think of how to cook it, buy it anyway if it is a really good bargain because you can freeze it. Morrison's make a point of having fish you can freeze on their fish counter - ask if you are not sure, the staff are very helpful at my local store. I've had no problems with fish I've bought at reduced price and then frozen from them. And freezing means you can eat it as part of a planned menu.

  • At our local Tesco you often find skate wings reduced on the fish counter. Here's a recipe.

    80z/240g skate wing

    [FONT=Verdana, sans-serif]juice of 1 lime or lemon[/FONT]
    [FONT=Verdana, sans-serif]salt and ground black pepper
    ½ oz/15g fresh breadcrumbs
    [/FONT]

    [FONT=Verdana, sans-serif]1 medium tomato, sliced[/FONT]
    [FONT=Verdana, sans-serif]1 teaspoon olive oil
    1/2 oz/15g Double Gloucester with chives and onion
    [/FONT]
    [FONT=Verdana, sans-serif]grated
    lime or lemon slices and parsley sprigs, to garnish

    1 Preheat a medium-hot grill.

    [FONT=Verdana, sans-serif]2 Rinse the skate wing and pat dry with kitchen paper. Place on' the grill rack.

    [FONT=Verdana, sans-serif]3 Mix together the lime or lemon juice and olive 00 and brush over the fish. Season with salt and black pepper and cook for about 6 minutes on each side basting frequently with the lemon juice mixture.

    [FONT=Verdana, sans-serif]4 Sprinkle the breadcrumbs and grated cheese on top of the fish and grill until melted and golden. Transfer to a warm plate and serve with tomato l slices. Garnish with lime or lemon slices and parsley_

    put sliced tomato and mushroom on top of smakoed haddock,cover with foil and bake for same time as takes potatoes to cook lush.

    put haddock into some beaten egg,cover with nreadcrumbs and parmesan which have been mixed together and bake in oven about 20 mins.

    salmon plain done in microwave this way of cooking keeps it lovely and moist-time depends on microwave but do for 2 mins check then add 30secs if needed then another 30secs and so on

    Fish soup is one of my favourites. Made with either normal or smoked haddock. Just cover the fish with boiling water. If there's still skin on the bottom, scrape it off once it's boiled for about 10 minutes, then just flake the fish and put it back in the water. Add onions, diced potatoes and loads and loads of sliced/diced carrots. Season and just boil until potatoes and carrots are soft. Then mash with a potato masher, and just before serving, add a tin if evaporated milk.

    I don't have a recipe as i've always done it by guesstimate. It was always a favourite when I was little. It's lovely with some onion salt added too. :)

    It won't last more than second day because of the milk, and you need to keep it in the fridge once it has cooled if you have any left overs. It freezes okay though.

    You can find recipes for Cullen Skink online. It's delicious, but most of those recipes use cream. It's very nice with the evaporated milk though.
