Is this a challenge

For my daughter working full time, I have exhausted myself, coming up with wheat/dairy free lunches for her. We have covered, salads (tuna nicoise, prawn with corn pasta, chicken salad etc.), spanish omelette and soup. There is no microwave. Does anyone have any suggestions? She is not on a gluten free diet, just wheat intolerant. But has been suggested not to eat too much spelt. She doesnt like goats cheese, so quiches are out! Unless someone can make a suitable suggestion.

I am sure its not too much of challenge for all on here, but my imagination has seized!!!

Have suggested buying a microwave for the staff room, but you know how stuffy this organisations can be!!

    Wilkinsons do a meal flask so she could take hot food to work and expand the range to include stews/casseroles, jacket potatoes, chilli, curry, sherherds pie.... the list is almost endless. It's only a fiver *link*
    TOP MONEYSAVING TIP

    Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!

    Flavoured rice is good - cook in stock (or with tom puree), add spices of choice, mixed with peas, sweetcorn, chopped ham etc. I like this in pitta bread but not sure if you can make/get wheatfree pitta?

    I have also seen suggestions to make a very thin plain omelette and then use this like a wrap instead ;)

    Ooh and biriyani (the more dry rice curry) is lovely cold :)
