Chicken stock question

I've got some frozen chicken stock, from the last lot I made. However, I suspect it's a bit weak, because it's not very jelly-y.

If I make more stock today, can I add the frozen stock to it to strengthen it? i.e use the old stock as the liquid of the new?
If you lend someone a tenner and never see them again, it was probably worth it.

Comments

  • If it's started to go thin, after once being firmer, this means that the protein in the stock has started to break down. As long as it smells and tastes OK, I'd use it, and if you need more stock you can add fresh.

No, the stuff I've got in the freezer was never firm. That's why I thought I could use it as the base for the new stock I'm making today?

I often combine two different batches of stock if I want a larger quantity. Just make sure not to re-freeze if it's been previously frozen.
