Potato Pudding - has anyone tried this before?

I found this recipe for Potato Pudding in a charity cookbook from a few years ago. It's a recipe donated by the actor Paul Scofield and I wondered if anyone's tried it or had something similar before.....and if so, was it any good?!
POTATO PUDDING
1lb Potatoes (when peeled)
3ozs sugar (I would imagine caster sugar)
3 ozs butter
4 eggs
Grated rind of one lemon
Pinch of salt
Boil potatoes and mash smooth and dry.
While still hot, beat in butter, sugar, eggs, lemon rind and salt.
Bake in a moderate oven for 40 minutes and serve sprinkled with sugar.

I found a recipe for Sweet Potato pudding that I've made often this past winter. We had a glut of sweet potato (the white flesh variety). Only had 2 eggs in it though. It's got a brown sugar/walnut topping. Served it with custard and it was lovely. I'm off to bed so if anyone's interested I'll post the recipe tomorrow.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0

900g (2lb) sweet potatoes, peeled and chopped

100g (31/2oz) soft dark-brown sugar
[/FONT][FONT=Verdana, sans-serif]3tbs dark rum or 3 tablespoons lemon juice
grated rind and juice of 1 lime

4 tablespoons skimmed milk
[/FONT][FONT=Verdana, sans-serif]1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg[/FONT]

Preheat the oven to 180ºC/350ºF/gas mark 4.Place the sweet potatoes in a large pan, cover with water and cook for 20–25 minutes, until tender. Drain and mash well, cool a little then stir through the butter, sugar, rum (or lemon juice), and lime rind and juice. In a separate dish, beat together the remaining ingredients, then stir into the sweet potato mixture.
Turn into a greased and lined 2lb (8cm x 18cm, deep) loaf tin, then bake for about 11/2–13/4 hours until firm. Sweet Potato Dessert
3 cups mashed sweet potato ( I used white but the orange flesh would be fine too)
1/2 cup sugar
2 beaten eggs
2 tbspoons butter
1/2 cup milk
1 1/2 teaspoons vanilla
Topping
1 cup brown sugar
1/3 cups plain flour
1 cup chopped pecans or walnuts
2 tbspoons butter
In large bowl mix cooked sweet potato, sugar,eggs butter, milk & vanilla.
Pour into greased baking dish.
Mix topping (except butter) and sprinkle over mixture.
Cut up butter into little cubes and sprinkle on top.
Bake mod oven 35 - 40 mins. I serve with custard.
Sorry about the cup measuements but just use any cup and it will work. It's pretty forgiving. It makes quite a bit so if there is only two of you, you might halve it.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0 -
i can't remember the recipe at all, but when i was at school, i remember making yummy chocolate brownies using mashed potato!!!
