Help! What can I cook tonight?

I had/am having a miscarriage and therefore don;t want to go out to the shops. OH is willing to but doesn;t really want to either.

We don;t have a lot of food in but I will list it. I'm looking for ideas for dinner tonight.

We have:
4 tins tuna
1 tin pink salmon
2 tins plum toms
1 tin mushy peas
1 onion
1 pepper
1 big courgette
2 eggs
a tiny piece of leftover gammon - about two slices

in the freezer:
2 sausages
2 pieces of chicken in breadcrumbs
2 tiny spring rolls
2 nasty cheap plastic chicken breasts that don;t taste of anything!

I also have a chicken carcass with some meat on it but I wanted to use that for soup.

I also have rice, pasta, cous cous, risotto rice, flour, spices, herbs, etc.

There's only two of us to feed - what can we have? :confused:

    I'm sorry to hear your news, if I could I'd do your shopping for you both.
    Hope I cna give you some ideas.

    First of all take the chicken breast out of the freezer to defrost for tomorrow night.
    Tonight you could cook some pasta and stir in the half the tin of tomatoes and some Italian seasoning, and serve it with the tuna. Very quick and easy to do. Maybe cook half of the courgette and throw that in the pasta too. It'll be nice and warm anyway.

    Tomorrow, cook the chicken under the grill or in the oven, and serve with savoury rice made with rice, pepper, onion.


    Gammon, eggs and tomatoes with the rest of the tin of toms maybe? Oh gosh I wish I had some gammon :o

    When I have the cheapo chicken breasts I use them asap, so they are gone ;)

    Sorry to hear about your mc. Something easy - a bung it all in job sounds like the best bet.

    Risotto using the gammon, nasty chicken breasts (gammon should give it more flavour), onion, courgette and pepper:

    Chop all ingredients first.

    Cook up the onion with some herbs and garlic in butter/oil, add the chicken breasts chopped, when cooked through, add chopped gammon and courgette and finally the rice. Ensure fully coated then cover with some stock and add the pepper. Bring to boil, then turn down and simmer covered until most of the liquid has been absorbed. Season to taste.

    Tuna or salmon from tin pasta ,

    chopped pepper and courgette & tomatoes with salmon/tuna and two boiled eggs cut into quarters. you add a little oil if you have it. Use cous cous instead of pasta to make it even quicker use chicken stock to add more flavour

    skintchick, so sorry to hear about what you are going through, have a hug from me aswell x

    With the food, I'd do the chicken in some sort of sauce, I usually used tinned toms and spices etc to make a bolognaise style sauce but with chicken, serving with pasta usually or cous cous. Some grilled veg, sliced breaded chicken on a bed of rice. With the gammon maybe chop into small pieces and do a gammon risotto, have you got some normal peas? or any other veg I am sure would be nice. Sausages chopped with the other tin of tomatoes over pasta or made into sausage plait with pastry around, fill out a bit with breadcrumbs and serve with the mushy peas.

    Sorry I am at a 'no idea' moment with tuna and salmon as I don't like it :o

    We did gammon risotto last night (he will cook but I have to supervise!) so I'm thinking maybe tuna pasta or chicken pasta. Couldn;t feel less like cooking TBH but we need to eat.
