recipe for chicken & rice soup

apologies if someone has posted one already but have looked and can't find one.

H is ill today and really wants chicken and rice soup for his dinner, I know I have a recipe somewhere but can't find it so can anyone help?

    Chicken and Rice soup is the easiest of recipes . 1 chicken portion or a stock cube . a grated carrot and half an onion sliced and 2 desert spoons of rice B ring the chicken to the boil and then add the rest and boil for an hour or so and thats it.
  • If you have chicken stock in the freezer, use that. Makes the nicest chicken soup I know of, very comforting. I think jewish mothers are definately onto something there ;)

    Does anyone have a recipe for chicken & rice soup? Attempted to make myself before and used to wrong rice could have used the soup as wallpaper paste it was that thick lol :rotfl:

  • Hi there i do one thats lovely, boil your chicken with a small cupful of rice and then add salt, pepper and whatever herbs you want and then add some chopped tomatoes and some puree, all of the above is just bunged in with no measurements except the rice, quick easy and tasty!

    Cream of Chicken with Wild Rice Soup

    Not tried it myself but it looks lovely and has great reviews. Just search for Chicken rice soup and you get several results. hth :)

    I make mine without blending it, so it's kind of a watery stew, leftover chicken from a roast with bits, then onions, carrots, celery, leek. add the rice last and boil it until just cooked, mushy rice in soup never appealed to me.

    real chicken stock, nicest made from a roast carcass (absolutely no cubes) + very finely chopped onion, coarsely grated carrot, seasoning, including a small dash of soy sauce if you like

    cook till veg are done, add rice (not too much or you'll get chicken/rice porridge)

    cook till rice is just done, adjust seasoning, sprinkle with finely chopped parsley if you have it & serve ... simple & delicious :)
