My new years resloution was to make better calzone and better fudge (not using condensed milk) . I have not really suceeded. My main issue with the calzone was that I can't get the dough to stay soft when it's cooked. I really want something like they serve in Frankie and Bennies, it has a lovely soft dought. My dough comes out crusty. It is quite tasty but not what i want. I have tried covering it with foil when I cook it and brushing with milk but it hasn't had any effect. I wonder if I need a different dough recipe. I use a basic bread dough recipe.
Does anyone have any suggestions?

I think your oven might be too hot or you might be leaving it in for too long?0

You might be better off making your dough from a pizza base recipe rather than using a bread dough recipe.

Thanks everyone, I'm going to try the BBC recipe and also the baked bean can with water idea.
TBH my oven may be to hot at the top - it stopped heating from the bottom a while ago, so anything is difficult to cook in it, and I tend to have to turn everything mid way through wo make it cook - had to do this with some Chelsea buns earlier!0
