calzone

My new years resloution was to make better calzone and better fudge (not using condensed milk) . I have not really suceeded. My main issue with the calzone was that I can't get the dough to stay soft when it's cooked. I really want something like they serve in Frankie and Bennies, it has a lovely soft dought. My dough comes out crusty. It is quite tasty but not what i want. I have tried covering it with foil when I cook it and brushing with milk but it hasn't had any effect. I wonder if I need a different dough recipe. I use a basic bread dough recipe.

Does anyone have any suggestions?

    I think your oven might be too hot or you might be leaving it in for too long?

    Hi suzy,

    You might be better off making your dough from a pizza base recipe rather than using a bread dough recipe.

    I've used this recipe from the BBC in the past ( changed the fillings though) and it was lovely. Very moist, I brushed some garlic butter on the calzones five minutes before the end and they were gorgeous. Hope you enjoy it x

  • Try putting an old baked bean tin of water in the bottom of the oven. The steam might help keep it moist.

  • Thanks everyone, I'm going to try the BBC recipe and also the baked bean can with water idea.

    TBH my oven may be to hot at the top - it stopped heating from the bottom a while ago, so anything is difficult to cook in it, and I tend to have to turn everything mid way through wo make it cook - had to do this with some Chelsea buns earlier!
