Slow Cooking For One!

I've now moved into my own place and kind of got it sorted! I bought a slow cooker (one of the tesco ones that were on offer, thanks to a kind OS'er!) and am now a bit stumped.

When I was with ex-MrK, I only used the slow cooker a couple of times before we broke up, and he seems to have acquired it. Basically I'm wondering how feasible it is to use it to cook for one. It's a 3.3litre one which looks pretty big now it's arrived!

Any recipe ideas would be welcomed, although I have looked at the massive list on here, it's more the how much do I cook/can I freeze things like stew etc answers I'm after! :o

    What I sometimes do is put a small plate/saucer upside down in the base of the cooker and place a whole chicken on it.

    Cook it on low for about 7 hours or so and pull off the legs and strip the meat off whilst it is still warm, it's easier that way. Leave the breasts to cool and freeze half of the breast and keep the other one in the fridge for sandwiches etc.

    We have a 3.5 litre one and I cook a large batch of chilli (usually use 400g mince padded out with lots of veg and kidney beans to make about 6-8 portions) and then freeze for easy meals on busy days.

    I also cook sausage casseroles in it and batches of soups - all can be frozen.

  • I often do meals for one in my slow cooker. In fact there's a lamb shank in there now. I've just bunged in the following:

    tin of chopped toms
    carrot batons
    red onion
    peppers (bit of red,yellow & green)
    aubergene
    bay leaf
    mixed herbs
    garlic
    squeeze of lemon
    lamb stock (or stock cube)
    lamb shank
    seasoning

    Now it sounds like a lot but you obviously put in as much or as little as you like. I sometimes add wine if there's some about.

    Bung it all in...switch on & leave to do it's magic! Tastes delicious...Well that's what ny hubby tells me. I can't stand lamb hence why it's only made for one. ;)

    In actual fact you can buy ratatouille in tins in most supermarkets. You could just buy that & bung that in. Even quicker & would cost less if you didn't have the veg in already.

    Baby Ruby arrived after 55 hours of labour & an emergency c section on Christmas Day at 14.41 weighing 6lb 6oz...And yes I did get out of cooking Christmas dinner!!:rotfl:

    With the stews/casseroles, how do you find the potato freezes? I've made potato and leek soup before and found the tatties went really grainy and mushy. I'm a potato fiend (blame the Irish genes) and couldn't bear not to have them! :o
