What to do with loin steak

I bought four loin steaks last week and frooze them. I took all 4 out of the freezer for our dinner tonight but OH has called to say he has to work on and will get dinner at work. Any suggestions on what I can do with the spare loin steak I really don't want to bin it. Can I cook and then freeze again or would it be okay in the fridge till tomorrow night?

Thanks for any suggestions.

  • Thanks for that never thought of stir fry. To be honest I have never cooked loin steaks so tonights dinner will be interesting.

    You could cook it and re-freeze it but I would just keep it in the fridge until tomorrow as unless it's in a gravy cooked meat can be quite dry after freezing.

  • I chop it up and cook with sliced apple, onion, green peppers, spices, and stock. Yummy.

    You could try a warming hungarian goulash. Made this for lunch today and it was delish.

    In a pan cook a large sliced onion and 1 or two cloves of garlic in a little oil for 3 minutes.

    Add the sliced or cubed steak and brown together with 2 tbs of paprika for 5 more minutes.

    Add a handful of cut mushrooms and one tin of chopped tomatoes and a red or green pepper.

    Add one pint of water and a beef stock cube.

    Cover and simmer on slow for 2 hours.

    Serve with boiled rice,potatoes or crusty bread.

    Optional - spoon over a mixture of plain yoghurt mixed with chilli powder and paprika to spice it up for those who like their goulash hotter.
  • Thanks for all the replies. Have put the xtra 2 in the fridge and will prob make a stir fry for tomorrow but have taken a note of the other suggestions for future. I love this site.
