chicken ideas please

I got 2 of those £2 chickens from asda a few days ago, and they are both out today. Any ideas what i could do? - shall i just slow cook them both and worry about it later ( lol) or freeze one ( i am one of these people that once it goes into the freezer it never comes out!).

Ok, ok, i need to go back onto Weightwatchers, lost 7 stone..... 2 back on, this has to change.....Help!!!:eek:

  • I did one in the SC yesterday - poured sweet chilli sauce over it (it was actually a sweet chilli dip which was due to go OOD next week) and cooked all day. Then pulled the meat off the bones and did with stirtfry veg & noodles, poured the sauce/chicken juices over the top - yummy!

    I would roast one for Sunday dinner and casserole/slow cook the other and refridgerate for eating on Monday or Tuesday or freeze when cooked.
    Cool down well first though.
    The left over roast chicken can be used for chicken mayo sandwiches, chicken caesar salad, chicken and mushroom pie or chopped up and mixed with a tin of tikka or jalfrezi curry sauce.

    ohh good idea - quick q, since i always skin my chickens once they are cooked should i skin it first, so the sauce gets into the flesh better?, or will this make it dry out too much
