  • I know this may sound strange but look at the Slimming World website or buy some of their books. They have excellent recipes and are very balanced nutritionally.

  • I have a nice veggie dish thats easy. You can add some artichoke hearts inbetween the aubergine.
    Parmiginana di Melanzane - I just call it aubergine bake
    need frying pan and largeish baking tin ( any shape )

    2 lb/900g of aubergines, sliced length ways

    1 pint of garlic and herb passata ( bottled type strained tomato normal with the pasta sauce in shops ) I have used 2xtin toms (when I was skint in past with added herbs and garlic) mashed up.

    115g/ 4oz or 1 and 1/4 cup of grated parmesan ( or could use any cheese in fridge )

    4 tbsp ( table spoons ) olive oil

    salt and black pepper.

    slice your aubergine length ways and brush with oil. Season with salt and pepper. Put your oven on to 190c/350f or gas mark 5 to heat up.

    Heat a frying pan or griddle ( you could put under grill, medum heat if you don't have pan ) When the pan is hot fry the aubergine for 4-5 mintes each side untill they are brown and tender. Do a couple at a time so they are cooked.

    Place a layer of passata in the dish, then add a layer of aubergine, then add a layer of cheese. Then do another layer till all passata and aubergine is used up. Add a layer of cheese on top.

    Bake in your oven for 20-25 mins. enjoy!!

  • Forgot to add you can make it for one if you buy lose aubergines and just used tinned tomatos.
