Weekly cook challenge

I am just wondering with ll this with Jamie Oliver saying learn to cook something and then pass it on, that maybe we should try to each week someone comes up with a receipe for us all to give a go.
Give the ingredients needed and of course how to make it then we could all say how it went and if it was easy or not and how the family liked it or not (my kids on the whole are little sods for not liking something!!!! )

    one of my faves is smoked haddock risotto, which I totally nicked from est est est. Fry some frozen smoked haddock, boil up long grain rice, mix the two with sour cream or greek yoghurt and add chopped chives/garlic/spring onions and maybe cooked frozen peas. Possibly some grated cheese on top.

    very delicious, super easy and you can adjust the quantities to taste.
  • My fav easy one is stew. Brown stewing beef and put in an oven proof dish. Then put in potatoes onions carrots and parsnip and stock and cook for two hours in the oven.
    Life is too short to waste a minute of it complaining about bad luck. Find joy in the simple things, show your love for those around you and be grateful for all that you have. :)

    I've just had this chili for tea tonight, served with strong grated cheese on top, rice and garlic bread. This is also nice served with soured cream on top and potato wedges. This is a recipe that will serve 4, and is very cheap. Enjoy.

    1 lb Beef Mince
    1 Green Pepper, sliced
    Handful of Mushrooms, sliced
    1 Onion finely chopped
    1 can of Baked Beans
    1 can of Chopped Tomatoes
    1 Tablespoon of Tomato Puree
    Dash of Worcestershire Sauce
    1 teaspoon Hot Chili Powder
    1 teaspoon Crushed Chili's

    In a frying pan add a bit of Vegetable Oil/Olive Oil. Brown the mince and onion. Add mushrooms and green pepper, fry for a minute or so. Add beans, puree, chopped tomoatoes, chili powder, crushed chili's and worcestershire sauce. Bring to the boil, then simmer for around 20 minutes.

    A lovely tea, that will warm you on a cold evening. I'm working nights tonight, so this will hopefully keep me warm.xx:money:

    We have spoke about this at work - we have suggested every week someone gives a recipe and its put on the notice board. What we are trying out is to use seasonal products. For instance we have had Apple crumble, butternutsquash soup etc. We have also been using things that have been on special in Tesco's etc. Just a thought if anyone has a notice board at work.

  • sounds like a good idea i did 2 free healthy eating cookery courses over 12 weeks earlier in the year they were really good.

    I miss not doing them so this would be great

    I think this is a good idea but Im a vegetarian so I wont be able to try many of these recipes. However I might still try a new veggie recipe now and then and post it on here, I cant garauntee it will be weekly as I have a chronic pain condition and Im not always up to doing much but I will do my best. My son who loves to cook gave me a recipe today for Butternut squash risotto so I will try that sometime in the next few days.
    8oz chopped onion, 25g butter,100g basmati rice, 150g chopped and peeled butternut squash,450ml boiling water,3 ripe tomatoes :rotfl: skinned deseeded & chopped, 50g grated cheddar cheese.

    Saute the onion in half the butter until softened, stir in the rice until well coated. Pour over the boiling water cover & cook for 8 mins over high heat.Stir in butternut squash,reduce heat and cook covered for 12 mins or until waters absorbed. Meanwhile melt remaining butter in small pan add chopped toms and saute for 2-3 mins stir in cheese until melted. Stir the tomato and cheese mixture into the cooked rice and serve.
    The recipe is actually ffor toddlers, but I think it sounds nice enough for adults too lol
