Legal Mortgage Advise

Hello everyone,
This is going to be hard to explain but here goes.
I have a long distance relationship with my girlfriend who has her own house. We have an arrangement whereby I pay the council tax whilst she pays the mortgage. This ensures peace of mind for her incase anything were to go wrong between us i.e. I can't demand a share of the house she's worked hard for in the event of a split. She knows I'm not with her for her money, but she's been burnt before so she's being cautious, which is fair enough and I'm happy with the way things are.
My employers pay me mileage to travel home at the weekends, they only required proof of council tax originally as evidence of our co-habiting. Unfortunately for me, they've now changed the goalposts and decided that they now need a mortgage statement or a cover letter from the mortgage company to state that I, and my girlfriend, own the property. However, I know my girlfriend will be very reluctant to do this, so is there a way that I can get a legal letter saying that even if my name is on the mortgage, I have no legal ownership rights to her property? Who's the best person to see about this? A mortgage advisor, her mortgage broker or a solicitor? Or all of them? I'm a bit stuck which direction to go but I need to sort this out quickly otherwise I will be digging myself into debt thanks to the travel expenses!
Any advise would be much appreciated!
