Ideas for extra Cox Apples

Have been having a sort out in the kitchen and seem to have gone a bit mad with buying apples 
Any suggestions for things to do with about 4-5 coxes apples?
Probably sounds stupid but could I make something along the lines of an apple pie/crumble with them - or do these things only work with cooking apples?

Apple pie/crumble works fine with eaters, but can be a bit dry so is enhanced if you add something - like raisins, lemonjuice (think appel strudel); or a few cookers (maybe one big cooker and your 4-5 coxes for 2 crumble and a pie; or some blackberries if you froze any in the summer. But go ahead anyway if you haven't got any of these things (or use other fruit!)
Or you could stuff them with mincemeat (the Christmassy kind, not the meat kind) and golden syrup and bake them.

The cooking apple tree in our garden is only good for puree so i always use Cox's for puddings - crumble, tarte au pommes, tarte tatin all very good with no extra fruit needed I find.
or try this: put half the normal quantity of sponge cake mix in a deep 7 inch cake tin top with sliced apples, sprinkle a bit of sugar on top then top with crumble mix. bake in the oven on same temperature as you would use for cakes but it will need at least 45 minutes and possibly more - test it with a skewer inserted and if it comes out sticky cook for another 10 minutes.
